As with wine, the key to great chocolate starts with the finest ingredients. Great beans make great chocolate. Until recently government regulations made it hard to source premium cocoa beans. But now, thanks to pioneering farmers and growers, some of the world’s best beans are being made available to a select and growing group of talented chocolate makers who are crafting their bars using small specially developed small batch roasters, winnowers, conches and tempering machines.

Tasting these bars is like tasting chocolate in technicolour. They are a true expression of the bean.

To that end we’ve tasted over 5000 bars and selected over 500 from 60 makers to retail and distribute.
