The dairy industry is unsustainable and current vegan cheeses simply don’t work. At New Culture, we are addressing these two problems by making cow cheese without the cow. Our first cheese is fresh mozzarella that is indistinguishable from animal-derived dairy mozzarella while not having any of the unhealthy, unsustainable or unethical drawbacks. We do this through a unique fermentation system that uses microbes to produce dairy proteins, the key ingredient that gives dairy cheese all the traits we love about it. We use these proteins to form cheese using the traditional cheesemaking process. Our first cheese is a fresh Mozzarella.
