With the increasing demand for high protein diets, the current methods of animal derived food are highly unsustainable. Milk produced using cows takes significant amounts of energy, land and water medications and has a huge carbon footprint. 97% of the nutrients are spent on the cows and only 3% make it to the consumers.
So we propose to develop dairy proteins like casein and whey to make dairy without cows. We can harvest the casein and whey through cellular agriculture, and then use them as a base to make all the dairy derivatives. This will allow us to eliminate cows from the picture but still produce the same proteins as in cow milk. We can make cheese, yogurt, milk taste the same as before, but without cows.
This can be achieved by introducing the dairy protein- producing gene to the yeast cells. These genetically modified yeast cells that have the ability to produce dairy proteins are grown in large bioreactors.
